Zesty Spanish Rice

This homemade Spanish Rice is the perfect dish for anyone looking to spice up their meal with a delicious south-of-the-border flavor. Perfect for any occasion, served as a side dish or main course.

Makes 10 Servings

Ingredients

1½ cup Long Grain Rice, uncooked 1 sweet onion, chopped 2½ cup chicken broth ½ cup green bell peppers, diced (1 small) 3 tbsp vegetable oil 1 tsp garlic, finely chopped 1 tsp pepper ½ tsp salt ½ tsp cumin 10oz can diced tomatoes and green chilies 8oz can tomato sauce- no salt

Directions

Heat oil in a medium skillet over medium-low heat, then add rice, bell pepper, onion, and garlic; cook until rice is lightly browned, stirring frequently. Stir in all remaining ingredients and bring to a boil, reduce heat to low, cover and simmer until all liquid is absorbed. (about 20 minutes, without stirring). Let stand 5-10min. fluff and serve.
